While it may seem a combination more suited to your dinner plate than your ice cream cone, our Corned Beef and Cabbage Ice Cream is bursting with flavor. We started with corned beef from our friends at Mise en Place Market, simmered with spices, crispy fried and then candied. After that, we braised cabbage with apples, onions and Casa Larga Riesling. Caraway and brown mustard seeds complement the cabbage’s earthy sweetness and the beef’s spicy notes. The resulting ice cream is complex and layered: a base that is sweet and earthy, spicy and buttery, punctuated by caramelized and savory pockets.
