Thai green curries are, like all of Thai cuisine, based on a balance of sweet, salty, savory, sour and spicy. Fresh cilantro complements the sweetness of Pittsford Farms Dairy cream and coconut, and gives the ice cream its lovely hue. Our salty and savory bases are covered by roasted peanuts and Seneca Lake culinary flake salt, with undertones of soy sauce (we use gluten-free tamari) and sesame oil. Fresh lime provides a hint of acidity, and cayenne lends a clean heat for a refreshing finish. The finished ice cream is a layered experience with a beautiful progression of flavors.
